Facturas are Argentina’s beloved butter-rich pastries, cousins of croissants and danishes, enjoyed at breakfast or merienda with mate or café con leche. Doughs are laminated or brioche-style, then baked or fried, and finished with glazes or sugar. Fillings include dulce de leche, quince paste, and pastry cream. Classic shapes carry playful names that nod to their look and history, medialunas, vigilantes, cañoncitos, tortitas negras, bolas de fraile, sacramentos, and palmeritas. The word factura, which means invoice in Spanish, comes from early 20th century union humor in Buenos Aires, a uniquely Argentine touch.
